"It's not enough to spend millions designing an interior, or tens of thousands to hire the best chef. Today, even the waitstaff has to have a signature outfit to complete the "experience" for customers.

When diners step into a Steven Starr restaurant, food is on the menu and martinis are served up at the bar, but everything else also has been carefully orchestrated, from lighting to décor to waitstaff outfits.

When his first Continental opened at 2nd and Market in the 1990s, it was enough to clothe servers in all-black ensembles. But for some of his newer digs Like Continental Midtown and Jones, hip clothes make the staff look less like servers and more like accessories to the interior design. At Continental Midtown, tight rugby shirts, jeans and miniskirts exude a hip, 60s vibe.

Before Continental Midtown opened this summer, Starr consulted with Kim Nguyen, owner of Kimmie kakes clothing design in Mahattan.

"They want things to go with the color scheme; the design," Nguyen said. "Uniforms are so important now to the concept."

Creating the outfits is a collaboration that starts months before opening, taking into account body types, range of movement and comfort levels."
